Waterfront Bistro: New Season, New Chef & Delicious New Menu

Waterfront Bistro is one of my favorite spots, by far, when I’m looking to have a delicious meal and a great glass of wine. Oh, and it has pretty fantastic water and sunset views too! So I was super excited to hear how they brought on a great new chef this season, who just introduced a new dinner menu. And guess what… today, I’d like to tell you all about it.

Let’s start with their new chef. His name is Riah Kuenzi, and he’s pretty darn talented. Riah’s been on St. John for the past three years, coming down here initially to work with Robin and Erica over at The Terrace – another great dining spot. (Random fact: Riah and Robin grew up together in Wisconsin, and Riah came down to work as their sous chef just six days after they initially asked him to.) Riah is self-taught and industry-trained, and has a background in French cuisine and fine dining. He even worked as an apprentice to a master chef who was once asked to be the White House’s executive chef back in the 1980s … pretty neat if you ask us.

Riah’s pretty excited about Bistro’s new menu, as are we. He calls it a classic French method, but with a Caribbean twist. He’s using local vegetables and starches, and he’s also playing a bit with different heat levels and textures. Check it out:

Bistro is also updating their drink menu and will have access to a master sommelier who will create a a wine list with food pairings. That is expected to happen within the next few months.

Waterfront Bistro is open seven days a week, and we strongly suggest you check it out. Lunch is offered from 11 a.m. to 3 p.m. (Monday through Saturday only), and dinner is offered nightly from 5:30 p.m. to close.
